
Cairanne Blanc 2025
Encépagement
Cairanne blanc 2025 is a blend of 40% Grenache Blanc, 30% Roussanne, 15% Clairette, 10% Bourboulenc and 5% Viognier.
These vines are planted on differents terroirs in Cairanne, but mainly on the sandy soils of the northwestern slopes of the vineyard.
Vignes et rendement
The average age of these vines are between 20 to 40 years, with an average yield of 20hl/ha for this vintage.
The harvest is made in open crates of 200Kg in order to not alter the grape.
Elevage
Pre-fermentation maceration in open crates in a cold room for 12 hours before pressing. Long pressing from 5
to 7 hours and separation of the last juices.
Our Cairanne Blanc 2025 was fermented for one month in concrete vats at low temperatures (between 18°and 22°C). Slow fermentations at low temperatures has the advantage of preserving as much as possible the finest aromas and producing fine glycerol, which brings the desired complexity.
This white Cairanne 2025 has been aged 7 months: 90% in steel tank and 10% in demi muids.
Lightly sulphated during the bottling process, only 1.5g/hl.
Dégustation
This wine has a shinny yellow colour with golden tinges.
Nose and palate, are dominated by white fruits, white flowers, honney, spiced and fresh butter notes.
Rich and aromatic, with an extensive final swirl of bitter notes.This white Cairanne is round, intense, long and deep.
